Ken and Cathleen Buggy’s Glencairn Inn, outside Lismore, in County Waterford, is an extraordinary pub, known as much for its originality in cooking as for its old-fashioned charm. The inn, which doubles as a bed-and-breakfast, has three dining areas: a cozy breakfast room, an atmospheric old kitchen, and a quaint pub. Everything in the pub is “made on the day,” so if tomatoes are in season, they might turn up in salads, soups, and tarts—such as this one made with green tomatoes.
